目的了解鞍山市食品中食源性致病菌的污染状况,为食源性疾病监测和预警提供科学依据。方法按照《食源性致病菌监测工作手册》2013年对鞍山市采集的11类食品进行10种致病菌监测。结果 2013年共采集275份样品,检出致病菌50株,总检出率为18.18%。其中蜡样芽孢杆菌检出率最高,为42.22%;其次是阪崎肠杆菌,检出率为32.00%。检出率最高的食品是婴幼儿食品,检出率为23.00%;其次是水产品与乳及乳制品,检出率分别为12.50%和8.33%。结论鞍山市食品存在不同程度的食源性致病菌污染,食品安全监管部门应加强食品安全监督管理。
Objective To understand the status of food-borne pathogens in food in Anshan and to provide a scientific basis for monitoring and early warning of food-borne diseases. Methods According to “Foodborne Pathogen Monitoring Manual”, 2013, 10 kinds of pathogenic bacteria were monitored in 11 kinds of food collected in Anshan City. Results In 2013, 275 samples were collected and 50 pathogenic bacteria were detected, the total detection rate was 18.18%. Bacillus cereus which the highest detection rate was 42.22%; followed by Enterobacter sakazakii, the detection rate was 32.00%. The highest detection rate of food is infant food, the detection rate was 23.00%; followed by aquatic products and milk and dairy products, the detection rates were 12.50% and 8.33%. Conclusion There are varying degrees of food-borne pathogens contamination of food in Anshan City. Food safety regulatory authorities should strengthen food safety supervision and management.
