目的了解丹东市市区大、中、小型不同类别餐饮单位的卫生状况。方法采用分层随机抽查的方法对丹东市99家餐饮单位的卫生管理、卫生设施、餐饮具洗消状况进行调查。结果大型餐饮单位的卫生管理状况较好,中、小型的卫生管理状况逐级减弱,大型餐饮单位卫生设施配备率、餐(饮)具检测合格均为100%,中型餐饮单位卫生设施配有率在77.5%~87.5%、餐(饮)具检测合格率为87.5%,小型餐饮单位卫生设施配有率在44.4%~55.6%、餐(饮)具检测合格率为54.2%。结论大、中、小型餐饮单位的卫生设施配有率和餐(饮)具检测合格率随大、中、小类别不同呈逐级下降趋势。执法部门的监管重点应放在中、小型餐饮单位上。
Objective To understand the health status of different types of catering units in urban areas of Dandong City. Methods The stratified random sampling method was used to investigate the health management, sanitary facilities and the decoction situation of 99 catering units in Dandong City. Results The health management status of large catering units was good, and the health management status of middle and small scale weakened step by step. The health facilities allocation rate, catering (drinking) facilities in 100 large-scale catering establishments were all 100% qualified. The medium-sized catering establishments’ From 77.5% to 87.5%, the passing rate of food and beverage was 87.5%, that of small catering units was 44.4% -55.6%, and that of food and drink was 54.2%. Conclusion The passing rate of health facilities and the passing rate of drinking (drinking) appliances in large, medium and small-sized catering units are decreasing step by step according to the categories of large, medium and small categories. Law enforcement agencies should focus on the supervision of small and medium-sized catering units.
