吃木耳的进候总觉得几朵不值得发,但是泡多了又担心隔夜之后不安全。最新的研究却提示我们,木耳不像绿叶蔬菜,放得时间长了反而更安全。隔夜的食物不能吃,主要有两个方面的担心,一是怕微生物繁殖,导致呕吐、腹泻等问题发生;二是怕亚硝酸盐变多,增加癌症的风险。对于前一方面,把食物放在冰箱里冷藏保存,一般可以防止这种危害;而对于后者,“放冰箱”似乎不起任何作用。
