自明正德四年(1509)至清康熙二十年(1681)平定三藩,历时一百七十多年战乱,四川皆为战场。人口由明末三百一十万锐减至清初五十万左右,土著饮食文化基本被破坏殆尽。为恢复经济,移民充蜀成为清代自顺治到嘉庆将近二百年间一以贯之的政策。至嘉庆时期大规模移民结束,嘉庆十七年(1820),四川人口达到2832.5万的高峰。近两百年持续移民,彻底改变了四川的人口构
