非营养性增甜剂应具有强甜度、味类似蔗糖、对温度和水解稳定、高水溶性和迅速溶解、粘度效应相似于蔗糖、对人安全、非生龋性以及价廉等条件。当前感兴趣的非营养性增甜剂有如下几种化学类型。氨基酸:包括无手性的环状氨基酸类,其中六元环的同系物最甜;D-色氨酸和6-氯-D-色氨酸是最有效的简单氨基酸。色氨酸的代谢物N′-乙酰犬尿氨酸(N′-acetyl kynurenine)及其D,L-氯衍生物均有甜味。
Non-nutritive sweeteners should have strong sweetness, taste similar to sucrose, stable to temperature and hydrolysis, highly water-soluble and rapidly dissolvable, viscous effect similar to sucrose, to human safety, non-cariogenic and inexpensive conditions. Non-nutritive sweeteners of current interest have the following chemical types. Amino acids: including achiral cyclic amino acids, of which six-membered ring homologues are the most sweet; D-tryptophan and 6-chloro-D-tryptophan are the most effective simple amino acids. Tryptophan metabolites N’-acetyl kynurenine and its D, L-chlorine derivatives are sweet.
