目的:了解温州市食品污染物中致病性弧菌的污染状况,初步确定可能污染致病性弧菌的高危食品,为食物中毒监测提供科学依据和为食品安全的危险性评估提供依据。方法:采用分步筛选及系统鉴定方法对食品样品进行致病性弧菌检测[1~3]。结果:检测生肉(牛、羊、鸡、猪)、熟肉制品、水产品、冷菜等其他食品共4大类样品149件,检出致病性弧菌95株,总检出率55.7%;4大类食品中致病性弧菌阳性率最高的为水产品(74.1%),其次生肉类为64.3%;而农贸市场样品污染率最高。结论:温州市食品致病性弧菌的污染严重,主要是副溶血性弧菌的污染,建议要加强食品卫生监督管理。
OBJECTIVE: To understand the status of pathogenic Vibrio in food contaminants in Wenzhou City and to identify the high-risk foods that might contaminate the pathogenic Vibrio, providing a scientific basis for monitoring food poisoning and providing the basis for the risk assessment of food safety. Methods: The pathogenic Vibrio samples were detected by step-by-step screening and systematic identification [1-3]. Results: A total of 149 specimens of 4 major types of raw meat (cattle, sheep, chickens, pigs), cooked meats, aquatic products and cold vegetables were detected. 95 strains of pathogenic Vibrio spp. Were detected with a total detection rate of 55.7% . The highest positive rates of pathogenic Vibrio in the four categories of foodstuffs were aquatic products (74.1%) and secondary meat products (64.3%), while the samples from farmer’s markets had the highest contamination rate. Conclusion: The food-borne Vibrio cholerae polluted in Wenzhou City is mainly polluted by Vibrio parahaemolyticus, and it is suggested to strengthen food hygiene supervision and administration.
