以裂片石莼为原料,对粗多糖理化性质进行分析,采用超滤技术获得不同分子量的多糖,再进行硫酸酯化修饰,研究酯化前后不同组分多糖对羟自由基(·OH)和超氧阴离子自由基(O2-·)的清除能力。结果表明,粗多糖中多糖和硫酸根含量分别为38.63%和19.41%,超滤分离裂片石莼多糖获得>100kDaUFP,30kDa~100kDaUFP,10kDa~30kDaUFP和<10kDaUFP4个组分,硫酸酯化修饰后硫酸根含量均有不同程度的增加,修饰前后抗氧化试验表明对羟基自由基的清除作用有明显下降。而对超氧阴离子的清除能力表明,10kDa~30kDa组分的清除率最强,达到79.1%。相较于未修饰的部分高出16.7%,具有明显的抗氧化能力。
