Polyphenols are important for the quality of fruits, vegetables and plant foods. It is generally absent in animal foods. These compounds consist of two classes: flavonoids and cinnamic acid derivatives. The characteristic of flavonoids is that it has two C6-C3-C6 skeletons with two aromatic rings connected by three carbon aliphatic chains (Figure 1). These skeletons consist of two distinct types of biogenic debris: the B-ring fragments consisting of C_6–C_3 and the A-ring fragments consisting of C_6.
