目的 :了解长沙地区常用食物中锌、铜、钙的含量 ,以及食物成分表中全国代表值是否适用于长沙地区应用。方法 :在长沙市 5区 5个大型集贸市场随机抽取 6 4种长沙居民常用食物 ,应用火焰原子吸收法测定其铜、锌、钙的含量。结果 :所测食物中锌的含量范围为 0~ 14 .31mg/ 10 0 g ,铜的含量范围为 0~ 0 .2 5mg/ 10 0g ,钙的含量范围为 4~ 4 10mg/ 10 0g ;与食物成分表中同种食物全国代表值比较 ,在数值上有较大的差别。结论 :食物成分表全国代表值中锌、铜、钙不宜作为长沙地区的食物成分分析依据。本测定结果为长沙居民选择食物及营养计算提供了依据
Objective: To understand the contents of zinc, copper and calcium in foods commonly used in Changsha, and whether the national representative value of food composition table is suitable for the application in Changsha area. Methods: Sixty-four kinds of foods commonly used by Changsha residents were randomly selected from five large bazaars in five districts of Changsha City. The contents of copper, zinc and calcium were determined by flame atomic absorption spectrometry. Results: The content of zinc in food ranged from 0 to 14.31mg / 100g, the content of copper ranged from 0 to 0.25mg / 100g, and the content of calcium ranged from 4 to 410mg / 100g. Food composition table in the same national food value of the same comparison, there are significant differences in value. Conclusion: It is not advisable to use zinc, copper and calcium in the national representative food ingredient table as the basis of food composition analysis in Changsha area. The results provide the basis for Changsha residents to choose food and nutrition calculation
