目的:分析日本、台湾杂色鲍及其杂交后代(“东优1号”)足肌和壳的氨基酸含量及组成。方法:采用水解法和磺基水杨酸提取法进行氨基酸分析,以氨基酸比值系数分(SRCAA)进行评价。结果:3种鲍足肌含有18种蛋白质氨基酸和3种非蛋白质氨基酸;其SRCAA均大于80%,且E/T、E/N符合FAO/WHO的蛋白模式;“东优1号”和日本群体足肌的EAA、总氨基酸(TAA)及其他功能性氨基酸的含量均显著高于台湾群体(P<0.05);3种鲍壳蛋白中含有18种氨基酸,“东优1号”鲍壳的TAA和EAA含量均高于双亲。结论:3种鲍足肌蛋白中的氨基酸种类齐全,比例合理,具有较高的营养价值,是一种优质的蛋白源。“东优1号”的足肌和壳在氨基酸营养方面,较好地综合了双亲的优良性状,且部分性状优于双亲。
Objective: To analyze the amino acid content and composition of the foot muscle and shell of Acacia abacus and its offsprings (“Dongyou 1”) in Japan and Taiwan. Methods: Amino acid analysis was carried out by hydrolysis method and sulfosalicylic acid extraction method, and the amino acid ratio score (SRCAA) was used for evaluation. Results: The three kinds of abalone muscle contained 18 kinds of protein amino acids and 3 kinds of non-protein amino acids. The SRCAA was higher than 80%, and the E / T and E / N were in accordance with the protein patterns of FAO / WHO. EAA, total amino acids (TAA) and other functional amino acids in foot muscle of Japanese group were significantly higher than those in Taiwan (P <0.05). The three kinds of abalone proteins contained 18 kinds of amino acids, “Bowl shell TAA and EAA levels were higher than their parents.
