食物是人与自然相处的艺术式转化。经年累月的习俗熏染,孵化了寿宁人就地取材、巧手为炊的能力。而寿宁的美食,离不了一个“山”字。山多海拔高,制约了寿宁人对于食材的获得,但也因为山高,寿宁再普通的食材,也因不一样的热量、光照、水分,散发出了不一样的香味。其实,每一种食物都有其独到的自然风味。厨师只要把食材的原味体现出来,便是美味的。在众多美食之中,最特别的存在,是有关家乡的记忆。当游子的味蕾接触到这种家乡的味道,所得的感动将胜过人间一切山珍海味。
