随着人类文明的发展,人类食品由动物蛋白逐步扩大到植物蛋白、菌类蛋白,食用菌的栽培和生产日益受到重视,发展越来越快。据统计,1950年,食用菌在全世界总产量约7万吨(主要是白蘑菇),1975年,各种食用菌的总产量为91.6万吨,1979年增加到124.4万吨。近年来,食用菌生产在世界各国发展较快,有70多个国家和地区大规模生产食用菌,每年平均增长率为4—10%。经济越是发达的国家对食用菌的需求量也越大,联邦德国1960年平均每人耗用食用菌150克,目前达到人年平均2000多克,增加10多倍。日本达到1000多克,而我国人年平均仅100多克。
