豆腐,相传是在公元前由中国人发明的,后来更衍生出品种繁多的豆制品,是我们中国人日常饮食中的钟爱之物。古代就有“五谷宜为养,失豆则不良”的说法,意思是说,五谷是有营养的,但没有豆子就会失去健康平衡。近年来更因为其营养丰富,含有铁、钙、磷、镁等人体必需的多种微量元素,还含有糖类、植物油和丰富的优质蛋白,且脂肪含量低,不含胆固醇,成为高血压、高血脂、高胆固醇症及动脉硬化、冠心病患者的药膳佳肴,也是儿童、病弱者及老年人补充营养的食疗佳品。然而,近两年来,有报道称,有孩子因为发生性早熟而就医,专家认为是多吃豆腐引起的,这使得家长们开始对豆制品投以怀疑的目光。
