蒌蒿又名芦嵩、蒌蒿苔、小艾、水艾、黎蒿、水蒿等,为菊科蒿属多年生草本植物。野生于山坡、荒滩、路边,现作一年生蔬菜栽培。蒌蒿主要以鲜嫩茎秆食用,清香鲜美,脆嫩爽口,营养丰富,每100g可食部分含蛋白质3.6g、钙730mg、磷10mg、胡萝卜素139mg、维生素C 49mg、铁2.9mg和多种氨基酸等,具有清凉、平抑肝火、预防牙病、喉病、便秘等功效。蒌蒿抗病性强,很少发生病虫害,是一种无污染的绿色食品。现将其栽培技术介绍如下:
