The influences of storage on the quality indices and nutritional content of fresh-cut winter squash were evaluated.The fresh-cut winter squash were stored at 5 ℃, 10 ℃ and the normal temperature separately and determined the physical indicators every other day.The indicators include: color of pumpkin, weight loss rate, soluble protein, pectin, polyphenoloxidase (PPO) activity, peroxide (POD) activity, ethylene release quantity, ethylene oxydases (ACO) activity, ethylene synzyme (ACC) activity and so on.
