Paprika,the dehydrated and milled fruit of several varieties of peppers (Capsicum annuum L.),is one of the most widely used coloring and flavoring spice for culinary and industrial purposes.Paprika principally contains bioactive components of carotenoids and capsaicinoids.Carotenoids play important roles in human health for prevention of cancers,cardiovascular diseases,eye disorders,skin degeneration and aging.Capsaicinoids also have strong physiological and pharmacological effect on sensory nerve fiber disorders,rheumatic diseases,cluster headache,painful diabetic neuropathy,postherpetic neuralgia,arthritis,cystitis etc.Traditionally,paprika is produced by solar drying,a slow drying method that may facilitate fungal proliferation and create favorable conditions for mycotoxins contaminations.
