目的:对江西省本地食品中重金属污染物进行监测,并对监测结果进行评价。方法:对粮食、蔬菜、水产品、肉类等8类食品1239份样品进行了铅镉汞的监测,对122份面制品进行铝的含量监测。结果:2010年江西省本地食品中铅、镉、汞、铝的合格率分别为95.9%、98.5%、99.5%和75.4%。食用菌中镉和汞污染较为严重,镉超标率为8.3%;部分肾脏样品受到铅和汞的污染,检出汞最大值为0.95 mg/kg;油炸面制品受铝污染最为严重,铝含量平均值为185 mg/kg,超标率达86.7%。结论:要进一步加强重金属污染物的监测力度,加强油条摊位点和食用菌生产企业的监督管理。
Objective: To monitor the heavy metals in local foodstuffs in Jiangxi Province and evaluate the monitoring results. Methods: Lead, cadmium and mercury were monitored in 1239 samples of 8 kinds of foods such as foodstuffs, vegetables, aquatic products and meats, and 122 pieces of aluminum products were monitored. Results: The passing rates of lead, cadmium, mercury and aluminum in local foods in Jiangxi Province in 2010 were 95.9%, 98.5%, 99.5% and 75.4% respectively. The cadmium and mercury in edible fungi were more polluted, the exceeding standard rate of cadmium was 8.3%. Some of the kidney samples were polluted by lead and mercury, the maximum value of mercury was 0.95 mg / kg. The fried noodles were the most polluted by aluminum, The average value of 185 mg / kg, exceeding the rate of 86.7%. Conclusion: It is necessary to further strengthen the monitoring of heavy metal pollutants and to strengthen the supervision and administration of the booth for brim and edible fungus production enterprises.
