鲐巴鱼(学名鲐鱼,Pneumatophorus japonicus Houttuyn),也叫青花鱼,油筒鱼,为黄海、渤海主要食用经济鱼类之一。每年春季向黄海近岸产卵洄游时,我国辽宁和山东沿海渔场大量捕捞,除小量供鲜食外,大部分均腌制。新鲜的鲐巴鱼含有很多脂肪和蛋白质,营养丰富,味道鲜美。鲐巴鱼肌肉(特别是背部肌肉)中含有大量组氨酸,在运输、贮藏和烹调不当时组氨酸脱羧产生组胺,误食后可引起过敏性中毒。多年来,每逢春夏两季各地常散发鲐巴鱼中毒,由于中毒症状一般比较轻,恢复也较快,多无致命危险,所以常被人们忽视。近年来,随着我国工农业蓬勃发展,在集体食堂就餐人数日益增多,因食鲐巴鱼中毒的病人有时成批发生,影响健康和工作。为认真贯彻“预防为
