目的了解奉化市农家乐餐饮业餐具消毒现状,加强对农家乐餐饮业餐具消毒卫生监督管理,防止食源性疾病通过不洁餐具发生和传播。方法采用随机整群抽样方法抽取5个镇(街道)不同经营规模的76户农家乐餐饮业餐具消毒管理现状进行现场调查,并对餐具消毒情况进行检测。结果农家乐餐饮业单位被调查项目中餐具消毒管理制度的建立率最高,达90.8%;其次为餐具消毒设施的配置率,为89.5%;专职餐具洗消人员配置率最低,仅为17.1%,餐具消毒检测结果总体合格率为61.5%。结论农家乐餐饮业餐具消毒管理及餐具消毒工作存在一定问题,应开展专项整治,加强监管和宣传教育。
Objective To understand the status quo of tableware disinfection in Fenghuang farmhouse catering industry and to strengthen the supervision and administration of tableware disinfection and hygiene in farmhouse catering industry so as to prevent foodborne diseases from happening and spreading through unclean tableware. Methods Stochastic cluster sampling method was used to investigate the status of disinfection of 76 tableware in farmhouses and restaurants in 5 towns (streets) with different management scales. The disinfection situation of tableware was tested. Results The establishment rate of tableware disinfection management system was the highest in Nongjiale Catering Industry Project (90.8%). The disposition rate of tableware disinfection facilities was 89.5%, that of professional dishwashing staff was the lowest (17.1%), tableware The overall pass rate of disinfection test results was 61.5%. Conclusion There are some problems in tableware disinfection management and tableware disinfection in farmhouse restaurant industry. Special rectification should be carried out to strengthen supervision and publicity and education.
