Knox Abstract: This article examines the Slow Food and Slow City movement as a new urban development strategy that focuses on local resources, economic and cultural forces, and the unique historic context of towns. The article continues the recent discussion of a new policy on economic development and argues that slow-moving urban movement as a strategy helps to establish an interdependent relationship between economic and environmental development goals and fair urban development. In this paper, case studies of Waldkirch and Hersbruck, two slow-moving cities in Germany, reveal how these two cities restructured their urban policies. This research is new
