鳜鱼,又称桂鱼、鳌花、花鲫鱼等。主要产于我国南方的江、河、湖中,湖北、江苏、浙江最多。二三月鳜鱼最肥美,“西塞山前白鹭飞,桃花流水鳜鱼肥,青箬笠、绿蓑衣、斜风细雨不须归”。这是唐代诗人张志和(金华人)在湖州写的的《渔歌子》。南宋时,温州就有鳜鱼出产,鳜鱼肉结实、色洁白、味鲜美,是淡水鱼中较名贵的鱼,英文:Mandarin Fish(有品级的鱼)。鳜鱼适于烧、蒸、溜等烹调方法。历来是我国的宴席上主要整鱼菜之一,如:松鼠鳜鱼、麒麟鳜鱼、葱油鳜鱼、干烧鳜鱼等。凡是黄鱼能做的菜肴,鳜鱼也能做。同时,黄鱼不适宜做的菜,鳜鱼亦能做得较好。如:炒鱼片、温州鱼圆、七星鱼丸等。
