鉴于近年来全国职业院校技能大赛“中西餐主题宴会设计”的频频举办,结合《餐饮服务与管理》教学实际,提出应在本课程实训教学中运用技能竞赛法,以激发学习兴趣,改善教学效果,提高参赛质量。首先要进行课程目标分析,其次要根据教学内容选取合适的技能竞赛活动项目,组织竞赛小组,制定竞赛规则,控制竞赛过程,竞赛结束后进行点评和总结。
In view of the frequently held “Skills Design Contest of Chinese and Western Courses” and the teaching practice of “Catering Service and Management” in recent years, it is suggested that the Skills Competition Law should be applied in the teaching of this course to stimulate interest in learning , Improve teaching effectiveness and improve the quality of competition. First of all, the course objectives should be analyzed. Secondly, according to the teaching content, the appropriate skills competition activities should be selected, the competition teams should be organized, the competition rules should be established to control the competition process, and the comments and sums up should be made after the competition.
