一、豆瓣菜(西洋菜) 是十字花科豆瓣菜属中的栽培种,别名西洋菜、水田芥。每100克嫩茎叶含维生素 C 79毫克,含钙43毫克、磷17毫克、铁0.6毫克。以嫩茎叶供食用。质地脆嫩,有辛香味,可做色拉、盘菜配料或汤料,凉拌、炒食、做馅,或与鸡、蛋、肉一起烹制。种子含油24%,可制工业用油。豆瓣菜有治疗肺热痰咳和通经的作用,还是维生素缺乏症的极好食疗蔬菜。
