现代国内外茶叶科学工作者对茶的化学成分和医药作用研究发现,茶叶化学成分有三百多种.其中咖啡碱含量约占1~5%;绿茶中含缩合多酚类约10~24%,红茶因经发酵,含量仅在 6%左右.我国市售的茶叶,一般含咖啡碱约2~4%,含多酚类约3~4%.由于茶叶含有益于人体的化学成分较多,因而具有多方面的生理作用.
