The competition for the development of recombinant rennet for the manufacture of cheese has become increasingly fierce. Genencor (South San Francisco, California, USA) and Chr. Hansen’s Laboratory (Mitwau-kee, Wisconsin, USA) have made remarkable progress in the commercialization of recombinant rennet, while the U.S. Patent Office has approved US Collaborative Research. The (CR) company (Bedford, MA) uses a recombinant organism to make rennet. US Dow Chemical (DC), which has been assisting CR’s research work (Mild, Michigan), has international sales rights and pays royalties to CR. The DC company is now negotiating with a third company that plans to commercialize recombinant rennet, and will apply for a sublicense.
