亚硝酸盐是一种食品防腐剂,具有显著的杀菌或抑菌效能,能防止食品腐败变质,在熟肉制品的生产加工中,特别是在腌肉工业上得到广泛应用。但亚硝酸盐具有一定的毒性,食用过量会对人体遭成一定的危害[1]。为了解餐饮业中自加工熟肉制品中亚硝酸盐的含量,避免添加过量导致食物中毒等对人体产生的危害,对75家餐饮单位生产的104件熟肉制品进行了检测。
Nitrite is a food preservative with significant bactericidal or bacteriostatic effect, which can prevent food spoilage and deterioration. It is widely used in the production and processing of cooked meat products, especially in the cured meat industry. However, nitrite has some toxicity, excessive consumption of the human body will be a certain hazard [1]. In order to understand the content of nitrite in cooked meat products in the catering industry and to avoid the harm to human body caused by excessive food poisoning, 104 cooked meat products from 75 food and beverage companies were tested.
