玉米醇溶蛋白是玉米胚乳蛋白的主要成分,其中α醇溶蛋白含量最多,其生化性状被认为与玉米营养品质特性有着直接的关系。本研究采用以十二烷基硫酸钠-聚丙烯酰胺凝胶电泳(SDS-PAGE)技术、液相色谱质谱/质谱(LC-MS/MS)技术为核心的蛋白组学技术,解析玉米自交系(PC130)胚乳α醇溶蛋白的分子构成,显示该类蛋白由10种蛋白分子所构成,表明该技术可有效用于玉米醇溶蛋白的表征鉴定。
Zein is the main component of corn endosperm protein, in which the content of α-prolamin is the most, and its biochemical characters are considered to have a direct relationship with the nutritional quality characteristics of maize. In this study, proteomics with sodium dodecyl sulfate-polyacrylamide gel electrophoresis (SDS-PAGE) and liquid chromatography-mass spectrometry (LC-MS / MS) The molecular structure of endosperm α-gliadin (PC130) showed that this kind of protein consisted of 10 kinds of protein molecules, indicating that this technique could be effectively used for the characterization and identification of zein.
