用GC/MS方法分析测定了采自云南怒江农场的芒果属(MangiferaL)的3个品种三年芒、吕宋芒和马切苏芒的主要香味物质。每个品种的香味成分均在20个以上。对主要成分进行了半定量计算,结果表明三年芒主要含有异松油烯、γ-羟辛酸内酯、3,7-二甲基-1,3,6-辛三烯、γ-羟己酸内酯、石竹烯、2,6-二叔丁基-4-甲基苯酚;吕宋芒主要含α-蒎烯、蒈烯、2,6-二叔丁基-4-甲基苯酚、石竹烯、γ-羟己酸内酯;马切苏芒主要含α-蒎烯、桧烯、己烯[3]醇、2,6-二叔丁基-4-甲基苯酚、1,3,5-环庚三烯、石竹烯等。不同的芒果品种所含香味成分有较大的差异。香味浓郁的三年芒含有高浓度的异松油烯,而吕宋芒和马切苏芒则不含异松油烯,也无明显的芒果香味,也许异松油烯在芒果综合香气中具有特殊的作用。
The main aroma components of three species of Mangifera, Luzon and Lemongrass from MangiferaL collected from Nujiang farm in Yunnan Province were analyzed by GC / MS. Each species’s flavor components are more than 20. Different mango varieties contain more flavor components. The fragrant three-year-old Mount contains a high concentration of terpinolene, while Lucerne and Marcetu Mangoshanensis do not contain terpinolene, nor the obvious mango flavor, and perhaps terpinolene has a Special effect
