目的分析2012年滦县各类型学校食堂餐饮具卫生状况,查找影响餐饮具卫生状况的主要原因,为餐饮服务监管部门加强学校食堂监督管理提供科学依据。方法采取随机抽样的方法抽取滦县各类学校食堂餐饮具样品进行大肠菌群检测。结果 2012年滦县学校食堂餐饮具消毒合格率为66.96%,且餐饮具消毒合格率存在学校类型、餐饮具类型、消毒方法等方面差异。结论滦县学校食堂餐饮具卫生状况不容乐观,消毒方法、卫生从业人员素质是影响餐饮具卫生状况的主要方面。
Objective To analyze the health condition of catering utensils of all kinds of school canteens in 2012, find out the main reasons that affect the hygienic condition of catering utensils, and provide the scientific basis for the catering service regulators to strengthen the supervision and management of school canteens. Methods A random sampling method was used to extract all kinds of school canteen tableware in Luanxian for coliform detection. Results 2012 Luanxian school canteen tableware disinfection pass rate was 66.96%, and there is a difference in school-type, tableware type, disinfection methods and other aspects. Conclusion Luanxian school cafeteria health status is not optimistic, disinfection methods, the quality of health professionals is affecting the health status of the main aspects of tableware.
