Vitamin C deficiency is one of the oldest known diseases of mankind, which was clearly documented in the 13th century. Although the use of fruits, juices and vegetables to prevent scurvy has been known for centuries, the real progress and understanding are recent. It has not been more than 50 years since its active material was separated, and structural verification and laboratory synthesis were promptly completed. Until 1934, the first batch of 50 kg of industrial products was produced. In order to meet the needs, today’s production level has reached the number of tons per year. Despite this, there are still many problems to be solved regarding the role of vitamin C, and it remains a “creature of the frenzy” as a source of widespread debate and scientific controversy. The introduction of this article is hoped to pay attention to further study to make it more reasonable and effective in the prevention and treatment of the disease.
