目的了解广州市黄埔区学校食堂餐具洗消剂残留和影响洗消剂残留的主要因素,为保障学生身心健康提供参考。方法采用普查法,对黄埔区70间学校食堂进行餐具洗消制度和餐具洗消知识问卷调查,包括44间幼儿园食堂、22间中小学食堂及4间高等专科学校食堂;采用分层随机抽样方法,抽检1 204份餐具进行洗消剂残留检测。通过拟合二分类Logistic回归模型,探讨学校餐具洗消剂残留的影响因素。结果烷基(苯)磺酸钠残留总合格率为91.61%,幼儿园合格率最高,中小学合格率最低。游离性余氯残留全部合格。学校餐具洗消剂残留的主要影响因素有学校类型、学校性质、落实餐具洗消制度、餐具洗消知识得分等。结论督促学校食堂严格落实餐具洗消制度,加强餐具洗消员洗消知识培训,可减少洗消剂残留。重点是中小学食堂和私立学校食堂。
Objective To understand the main factors of decontamination residues in school canteens and the influencing factors of decontamination residues in the school canteens of Huangpu District, Guangzhou City, so as to provide reference for the protection of students’ physical and mental health. Methods The census method was used to investigate the questionnaire of dishwashing system and tableware decontamination in 70 school canteens in Huangpu District, including 44 kindergarten canteens, 22 primary and secondary school canteens and 4 canteens of college. The stratified random sampling method , Sampling 1 204 tableware decontamination residue testing. By fitting the binary logistic regression model, the influencing factors of school tableware decontamination residues were discussed. Results The total qualified rate of sodium alkyl benzene sulfonate was 91.61%. The highest pass rate of kindergarten and the lowest passing rate of primary and middle school were found. Residual free residual chlorine all qualified. The main influencing factors of school tableware decontamination residues are the type of school, the nature of school, the implementation of tableware decontamination system, and the knowledge of tableware decontamination. Conclusion The school cafeteria was urged to strictly implement the system of dishwashing disinfection and strengthen the training of dishwashing liquidator to eliminate the disinfectant residue. The focus is on elementary and secondary school canteens and private school canteens.
