This article introduced the buckwheat variety resources, buckwheat nutrition composition, including amino acids, vitamins, trace elements analysis results, discusses the buckwheat physiological function and therapeutic value. The current situation of research and development of buckwheat in China was reviewed, and the processing technology of buckwheat series products was introduced.
