目的了解杭州市居民盐摄入量情况和人群分布及影响因素,为下一步膳食指导和慢性病防控提供依据。方法采用多阶段分层系统整群抽样方法对1 533名杭州市居民进行膳食调查,调查采用3 d称重+记账和3 d 24 h回顾法。相关调查数据与《中国居民膳食指南(2011)》和《中国居民膳食营养素参考摄入量(2000)》进行比较分析。结果杭州市居民人均每日盐摄入量中位值为10.59 g。杭州市居民盐摄入量呈现家庭聚集性和城乡差异,劳动强度、学历、年龄对盐摄入量有一定的影响,需要进一步研究。结论与《中国居民膳食指南(2011)》一般人群盐摄入建议量相比,杭州市居民盐摄入量明显偏高,应重点加强对家庭膳食采购、制作人员和农村居民的干预工作。
Objective To understand the salt intake and population distribution of Hangzhou residents and its influencing factors so as to provide evidences for the future dietary guidance and prevention and control of chronic diseases. Methods A total of 1 533 residents in Hangzhou were enrolled in this study. The survey was conducted on 3 d weighing + accounting and 3 d 24 h retrospectively using multistage stratified cluster sampling. Relevant survey data were compared with “Dietary Guidelines for Chinese Residents (2011)” and “Dietary Reference Intakes for Chinese Residents (2000)”. Results The daily average salt intake per inhabitant in Hangzhou was 10.59 g. Salt consumption in Hangzhou residents showed family aggregation and differences between urban and rural areas. Labor intensity, education level and age had certain impacts on salt intake, and further study was needed. Conclusions Compared with the recommended intake of salt for the general population in the Dietary Guidelines for Chinese Residents (2011), salt intake in Hangzhou is significantly higher. Interventions should be focused on family diet procurement, production staff and rural residents.
