乌梅含枸橼酸、苹果酸、琥珀酸等有机酸成分,这些有机酸是霉菌繁殖的最好养料,在贮藏中容易发生霉变。而乌梅内的有机酸常与金属离子结合成盐,在其表面析出一层白霜。霜与霉看上去很相似,给乌梅的贮藏保管带来困难。根据笔者初步探索和体会,现将乌梅霉变的识别和处理方法介绍如下: 一、识别方法: 1.眼看:霜者白色,霉者黄白或黄绿色。
Wumei contains organic acids such as tannic acid, malic acid, and succinic acid. These organic acids are the best nutrients for mold propagation and are susceptible to mildew during storage. The organic acids in Ume are often combined with metal ions to form a salt and a layer of white frost is formed on the surface. Frost and mildew look very similar, which makes it hard for Wumei to store it.
