大量的研究已提示亚硝基化合物(NNC)对人类有致癌的危险性。人类所接触的NNC有的已先在体外合成,有的是在人体内合成。后一类体内合成的NNC危害性更大,已引起了人们的重视。一、人体内NNC合成的条件体外亚硝化动力学研究证实,胺类或酰胺类化合物与亚硝酸盐(NO_2~-)在酸性条件下反应可生成NNC,反应速率与这两种前体物的浓度成正比。因此,人体内NNC的合成取决于这二种前体物的存在、含量及反应条件。
