平顶山局一矿三食堂,依靠科学管理和深化改革,使饭莱和服务质量不断提高,1989年10月被中国统配煤矿总公司命名为“生产福利达标点”。为达到部颁标准我们做了如下工作: 一、严格内部管理 把干标准活、上标准岗细则和饭菜花样品种、卫生责任、劳动纪律、工作质量、营养配膳及各工种工序纳入了标准化管理轨道。逐一落实到班组、个人,使各种责任环环相扣,强化了炊管人员的事业心和责任感。严格把进、出料关,实行过磅建帐立卡,手续齐全堵塞漏洞,挂就餐职工意见箱,每月一次管理人员接待日;卫生上,每班组从原料到成品进行严格检查,发现食物变质坚决扔掉、并当事故追究;班后对案灶炊事机械擦洗、炊具蒸煮;当班炊事员必着整洁工作服,不准留长发、长指甲、班前班后用消毒液洗手;食品制作质量实行当班挂牌制,注明制作人,让就餐者公开评价监督。
