生姜既是调味品,也是保健品。生姜,别名紫姜、老姜等。我国中部、东南部至西南部各省区广为栽培。山东莱芜、平度、大泽山的姜尤为知名,亚洲热带地区亦常见栽培。生姜有嫩生姜与老生姜之分,嫩姜宜制作酱菜,老姜药用保健功效较好。尤其在夏天,正是吃生姜的最佳季节,中国民间有“冬吃萝卜夏吃姜,不劳医生开药方”的说法,还有“家备小姜,小病不慌”的谚语。
