苯并(a)芘(Benzo[a]Pyrene,以下简称B(a)P)是多环芳烃中有代表性的一种强烈致癌性化合物,它存在于沥青、煤焦油中,煤炭、石油、天然气、木材等有机物质的不完全燃烧、汽车尾气、工厂三废、香烟燃烧、海水中微生物的作用都能生成,尤其是在炼焦时,能大量产生,从而污染了大气、水质、土壤和植物。有些食品在加工过程中,由于工艺的不合理亦会产生。因此B(a)P在食物中的污染是比较广泛的。对于我省主要食品中B(a)P的污染情况,我们在1979年对南京、南通、扬州、徐州市和扬州地区的主要食品进行了调查分析。测定结果见表1、2、3~*。

For the pollution of B (a) P in the main food of our province, we conducted a survey and analysis of the main foods in Nanjing, Nantong, Yangzhou, Xuzhou and Yangzhou in 1979.
