目的分析2010年-2014年广西桂中地区饮食业中自制果、蔬汁(饮料)的卫生情况,评价自制果、蔬汁(饮料)的卫生质量,为制定合理有效的控制措施提供科学依据。方法按每年食品监督抽样、风险评估及专项监测的要求,对桂中地区采集的自制果、蔬汁(饮料)样品,按GB 19297—2003《果、蔬汁饮料卫生标准》进行检验分析。结果所检测的289份样品中微生物指标合格172份,合格率为59.5%,不合格的项目主要为菌落总数超标。结论 2010年-2014年广西桂中地区自制果、蔬汁(饮料)中,菌落总数项目超标较高,应引起重视,相关部门应采取措施,保护消费者的健康。
Objective To analyze the hygienic conditions of homemade fruits and vegetables (beverages) in the catering industry in Guangxi Zhuang Autonomous Region during 2010-2014 and evaluate the hygienic quality of homemade fruits and vegetable juices (drinks), so as to provide a scientific basis for formulating reasonable and effective control measures. Methods According to the requirements of food supervision and sampling, risk assessment and special monitoring every year, samples of homemade fruits and vegetables (beverages) collected in central Guangxi were tested and analyzed according to GB 19297-2003 “Hygienic Standards of Fruit and Vegetable Beverage Beverages”. Results Among the 289 samples examined, 172 were qualified as microbiological indicators with a pass rate of 59.5%. The unqualified items mainly included the total number of colonies exceeded the standard. Conclusions From 2010 to 2014, the total number of colonies in homemade fruits and vegetables (beverages) in Guizhong area of Guangxi province exceeded the standard and should be taken seriously. Relevant departments should take measures to protect consumers’ health.
