目的了解惠山区餐饮业和学校食堂餐饮具消毒质量情况,为进一步加强开展餐饮服务行业、学校食堂等单位的技术指导提供依据。方法采用大肠菌群快速检验纸片法对区内餐饮服务业及学校食堂餐饮具大肠菌群进行检测,并就餐饮具消毒质量情况进行分析。结果幼儿园、中小学校餐具总体合格率为82.8%,餐饮服务单位为76.2%;消毒方式上,采用电子消毒柜合格率最高,热水冲洗或无消毒合格率最低;幼儿园餐具消毒情况总体上由于小学和中学。结论餐具消毒合格率逐年上升,为进一步提高消毒质量,建议一方面尽快普及电子消毒柜等热力消毒设备;同时,针对部分餐饮服务或教学单位消毒质量不佳的单位,加强技术指导和监管。
Objective To understand the quality of sterilization in catering industry and school canteens in Huishan District and provide basis for further strengthening the technical guidance of catering service industry and school canteens.
