运用近红外光谱检测猪肉在室温和冷藏贮藏过程中细菌菌落总数,实现无损、快速检验猪肉品质以及预测猪肉的贮藏期。使用傅立叶变换近红外光谱仪测定猪肉样品在贮藏期内的光谱,同时采用常规菌落总数测定方法测定样品的细菌菌落总数,获得了猪肉细菌菌落总数对数值与近红外光谱特征值随贮藏时间的变化规律,建立了细菌菌落总数对数值的零级和一级模型,并采用主成分分析法建立了基于近红外光谱特征值预测初值的猪肉细菌菌落总数对数值的动力学模型。该方法准确、灵敏,可用于生鲜猪肉细菌菌落总数的测定及其安全贮藏时间的预测。
Near-infrared spectroscopy was used to detect the total number of bacterial colonies during storage at room temperature and in cold storage, to achieve a nondestructive, rapid test of pork quality and to predict the storage period of pork. The spectra of pork samples during storage were determined by Fourier transform near infrared spectroscopy. The total number of bacterial colonies was determined by the conventional method. The logarithmic and near infrared spectra of pork bacterial colonies were obtained with storage time , A zero-order and first-order model was established for the logarithm of the total number of bacterial colonies, and the kinetic model of the total number of bacterial colonies in pork based on the prediction of the eigenvalue of the near-infrared spectrum was established by using principal component analysis. The method is accurate and sensitive and can be used for the determination of the total number of bacterial colonies of fresh pork and the prediction of its safe storage time.
