Everyone who grew up in the 1960s remembers almost the classic lines in the sitcom New Prosperity: “Texas Tea is black gold.” Although not as good as Jed Clampet’s black gold (explained to those who did not see Listen to this program, this refers to the slang oil), but when we talk about sparkling red wines, we can apply the same sentence: “Australian tea is black bubble.” (Editor’s note: Australian Tea Derived from Texas Tea, is a wine.) These dull, sparkling wines are a must for the typical Australian summer grill. Although the wines used in these wines have nothing to do with Burgundy, the vintages of the wines are also vaguely expressed, but they were once cheekily labeled “Burgundy sparkling wines.” Today, most of Australia’s black bubbles are made using deep-skinned Shiraz.
