夏茶质量差的原因夏茶一般苦涩味强烈,清香味缺乏。与春茶比较,影响清香味的氨基酸、抗坏血酸(维生素C)和磷酸的含量较少,而产生苦涩味的单宁、咖啡碱的含量较多。夏茶品质低劣的原因最主要的是气象因素,特别是气温、地温的差异对品质有关成分的产生有很大影响。
The reasons for the poor quality of summer tea Summer tea generally bitter astringent, lack of fragrance. Compared with the spring tea, the amino acids that affect the fragrance, ascorbic acid (vitamin C) and phosphoric acid content is less, while produce bitter tannin, caffeine content is more. The main reason for the poor quality of summer tea is meteorological factors, especially the difference of temperature and ground temperature has a great impact on the quality-related ingredients.
