Undaria pinnae spore leaf is rich in polysaccharides and other nutrients, due to the hard texture, in the processing of wakame often abandoned in the form of waste material, resulting in a waste of resources and environmental pollution. From the perspective of resource recycling and environmental protection, taking Undaria pinnatiflora as the research object and polysaccharide extraction rate of spore as an index, the enzyme-assisted Box-Behnken design was used to optimize the cellulase-assisted extraction of polysaccharide from spores of Undaria pinnatifida Process conditions. The results showed that the optimal conditions for the cellulose extraction of polysaccharide from spore of Undaria pinnatifida were as follows: enzyme dosage 1.3%, liquor ratio 58: 1, time 3.2 h, and the actual polysaccharide yield was 7.25%. This result provided some references for improving the extraction rate of polysaccharide from spore leaf, which laid a solid foundation for the further study on the nature and function of polysaccharide from spore leaf of Undaria pinnatifida.
