目的了解2013年天津市市售婴幼儿食品中食源性致病菌的污染状况。方法根据天津市人口分布及食物消费等情况采集市售婴幼儿食品300份,对蜡样芽胞杆菌、阪崎肠杆菌、金黄色葡萄球菌、沙门菌以及卫生指标菌进行检测。结果各致病菌阳性率依次为:蜡样芽胞杆菌17.00%,阪崎肠杆菌2.00%,金黄色葡萄球菌0.67%,沙门菌未检出。婴幼儿配方奶粉和谷类辅助食品中蜡样芽胞杆菌阳性率分别为20.63%和15.38%。婴幼儿生制类谷物辅助食品和婴幼儿饼干或其他阪崎杆菌阳性率分别为22.22%、11.76%。结论 3类食源性致病菌中以蜡样芽胞杆菌的阳性率最高,食品类别上以谷类辅助食品中的生制谷类辅助食品最严重。除在食用前应采取相应预防措施外,相关部门应加强生产销售等环节的监管,以预防食源性疾病的发生。
Objective To understand the status of food-borne pathogens in commercially available infants and toddlers in Tianjin in 2013. Methods According to the population distribution and food consumption in Tianjin, 300 samples of infant food were collected and tested for Bacillus cereus, Enterobacter sakazakii, Staphylococcus aureus, Salmonella and hygienic indicator bacteria. Results The positive rates of pathogens were as follows: Bacillus cereus 17.00%, Enterobacter sakazakii 2.00%, Staphylococcus aureus 0.67%, Salmonella was not detected. The positive rates of Bacillus cereus in infant formulas and cereal supplementary foods were 20.63% and 15.38% respectively. The positive rates of infants and young children cereal auxiliary foods, infant biscuits or other sakazakii were 22.22% and 11.76% respectively. Conclusions The positive rate of Bacillus cereus is the highest among the three kinds of food-borne pathogens, and the most important is the raw food of cereal auxiliary food in food category. In addition to taking appropriate precautions before consumption, the relevant departments should strengthen supervision of production and sales and other sectors to prevent foodborne diseases.
