甜菜的蒸腾系数比谷子、玉米稍大,比小麦、马铃薯等作物的蒸腾系数小一些,这说明甜菜比小麦、马铃薯用水经济和耐旱性强一些。但由于甜菜的单位面积产量比较高,所以它的总耗水量比较大。甜菜第一年各生长时期的需水规律是:苗期需水最少(占总耗水量的11.8—19.0%),繁茂期需水最多(占总耗水量的51.9—58.0%),糖分积累期需水比较少(占总耗水量的27.1—36.2%)。甜菜各生长期对土壤湿度的要求是:苗期和糖分积累期的土壤水分以其最大持水量的50%为宜,繁茂期以土壤最大持量的60—70%生长最好。甜菜各生长期适宜的降雨指标是:苗期110—120mm,繁茂期150mm,糖分积累期50—70mm。因为我国各甜菜产区的降雨量由东南向西北递减,所以对甜菜如何灌溉,一方面要根据甜菜的需水规律,另一方面还要根据当地降雨量的多少和分布情况,把两方面的情况结合起来因需、因地制宜进行灌溉,才能获得甜菜的丰产和高糖。
