自中华人民共和国食(饮)具卫生标准(GB74934—94)发布,我站到1994年底将其中的快速纸片法应用了二年。我们对我站四年中(1991—1994)连续监督检测的16家宾馆、饭店,后二年用快速纸片法和前2年用原卫生部推荐的食(饮)具消毒效果检测法的结果进行比较,发现使用纸片法后阳性率显著提高(X~2=72.38,P<0.005);同时对10家带星级宾馆、饭店(表Ⅰ中前10个)和6家无星级宾馆、饭店(表Ⅰ后6个)各进行比较,其结果亦显著差异(X~=21.98,P<0.005,X~2=51.32,P<0.005)。随着改革开放的深入及经济的发展,本应提高的卫生水平及卫生意识却导致餐(饮)具消毒效果的下降,据我们分析原因有:新法灵敏度提高,采样过程中无菌操作不严格、结果判定时人为因素、宾馆饭店卫生意识不够强等。为了降低食(饮)具检测阳性率,监督部门应先提高自身素质,而宾馆、饭店则应加强其卫生意识。 中华人民共和国食(饮)具卫生标准(GB14934—94)中的纸片法由于简便、快速、实用等特点而迅速推广。我站于1993年开始使用南京三爱成分自动化分析有限公司生产的大肠菌群快速检测纸片。现将1991—1994年四年中,使用快速纸片前后2年我站连续监督检测的16家宾馆、饭店的食(饮)具检测结果进行比较。

In order to reduce the positive rate of detection of food (drink), supervision departments should first improve their own quality, while hotels, restaurants should strengthen their health awareness.
