目的建立并完善符合实际的餐饮业HACCP管理模式。方法成立组织机构,编制HACCP程序文件,在河北以岭药业有限公司凯旋门大酒店实际采取HACCP系统模式管理。结果HACCP管理体系对该酒店的整个食品加工过程能够实施有效的监控,对可能发生的食品安全问题及时发现和制止,从而有效地预防食品安全隐患引发的食物中毒,保护消费者人身安全。结论在餐饮行业中应大力推行HACCP体系管理。
Objective To establish and perfect the HACCP management model in line with the actual catering industry. Methods Organizations were set up to prepare HACCP program files. The HACCP system model was actually adopted at the Triumphal Arch Hotel in Yiling, Hebei Province. Results The HACCP management system can effectively monitor the entire food processing of the hotel and detect and stop possible food safety problems in time so as to effectively prevent food poisoning caused by food safety hazards and protect the personal safety of consumers. Conclusion HACCP system management should be vigorously promoted in the restaurant industry.
