拟订以成年男性轻体力劳动者的每日膳食中营养素供给量为评估标准 ,假设其每天所食副食均由菜肴供给。建立食物成分数据库 ,应用计算机对菜谱进行营养评估。结果表明 :单个菜肴无法满足膳食营养平衡需要 ,优化组合后的菜谱 ,三大营养素供给趋于平衡 .比例科学合理 ,但某些矿物质、维生素仍无法达到人体正常需要量。开发强化维生素和矿物质的营养调味品或科学地配以鲜果品是平衡膳食与传统菜谱结合切实可行的方法
In order to assess the supply of nutrients in daily diets of adult male light laborers, it is assumed that the non-staple foods they consume daily are supplied by the dishes. The establishment of food composition database, the use of computer nutrition assessment of recipes. The results showed that: a single dish can not meet the needs of dietary nutrition balance, optimize the combination of the recipe, the supply of three nutrients tend to balance .Scientific and reasonable ratio, but some minerals, vitamins are still unable to meet the normal needs of the human body. Developing nutritious condiments that fortify vitamins and minerals or scientifically with fresh fruits is a viable option for combining balanced meals with traditional recipes
