徐州地处苏、鲁、豫、皖四省交界带,虽自古受东夷文化、齐鲁文化、中原文化、楚文化等多元文化的冲击、陶冶,却又孕育了独特的乡风民俗。徐州饮食独具一格。它把南甜北咸、东辣西酸、南米北面、南茶北酒的地域差别融为一体,形成不南不北的饮食风味。主要饮食品种,可概括为三汤、五菜、八面点、十二撰。三汤就是汤、辣汤、丸子汤。汤系用母鸡配麦仁、佐八大味、胡椒粉熬制而成,味鲜香辣。辣汤用母鸡或鳝鱼熬制,另用面粉洗出面筋,涮入汤中,俗称“酸辣汤”。丸子汤则以油炸绿豆面丸子放入汤里烧煮,再浇上浓重的辣椒油,撒上香菜末,可泡镆作主食,味香醇辣。五菜指五种酒肴熟食。熟莱:以卤制猪头、猪蹄为主,肥而不腻,醇香可口;牛肉:先腌后煮,原汁本味;胭脂野鸭:先腌后卤,色红似火;烧鸡:施用13味香料配
